Katharos in Ancient Greek means purity and this ethos is reflected in the wine, Our aim is to reveal the pure aromas of the Melon De Bourgogne Grape. We believe that this achieved by practicing minimal intervention throughout the winemaking process, beginning in the vineyard where a specific parcel of vines was selected from the schistous hillside of our Domaine through to the cellar where no sulphur was added before the fermentation: only the natural sulphites created by fermentation process can be found in this bottle.
